Today’s brunch using the planned overs from Easter dinner:
Ham Eggs Benedict

I wrapped the ham slices in a damp paper towel and microwaved at 70% power for 1 minute.

I’m terrible at getting the shape of poached eggs correct, but I’m happy with these.

I pushed the advice I received on warming my planned over hollandaise one 30 second burst too far. Two 30 second bursts at 30% power resulted in beautiful runny hollandaiser, but it was barely room temperature. I was told not to go too warm, as the heat from the food would be enough to finish hearing the hollandaise, but I decided to do a third 30 second burst. Very soft scrambled hollandaise it is.
Lesson learned.

However, for me, these yolks were perfect.

Not the prettiest picture, but a once a year treat anyway.
Matzah brei topped with unsweetened apple sauce for brunch!
