On my after dinner brandy right now!
Dinner was pork, beef, roasted potatoes & parsnips, brussel sprouts & carrots & broccholi, yorkshire pudding, stuffing,
I did the roast vegetable a la Jamie Oliver - OMG they were good!

Parboil potatoes and parsnips for 10 minutes. Meanwhile have roasting tray in oven with goose fat, a full bulb of garlic broken up into cloves (still in paper), lots and lots of rosemary. Drain veg after 10 mins. Leave to steam dry. if not fluffy, toss in colander until they are. Transfer to roasting tray, toss gently in oil. Add salt and pepper, grate over the zest of one lemon and the zest of two clementines. Into oven for 45 minutes, Check after 35 just in case.

Tonight will be bone-in pork chops.
I'll smear them with mustard,
coat with Italian-style bread crumbs,
brown on both sides,
and then bake with my home-made chicken stock
in a covered casserole for about an hour.
Along side will be baked potatoes and some steamed broccoli,
perhaps in cheese sauce to put over the potatoes...

Any skillet with high sidewalls or wok will do - it just shouldn't have wooden or plastic handles as you have to put it into the oven. In fact even a casserole woul work.Menolly wrote:Oh, does that sound awesome.
I have a 12" cast iron skillet, but my wok is hammered steel. Are either acceptable for your recipe? I don't think I've ever seen a cast iron wok, and will have to hunt one down...

Tonight will be New York Strips, rubbed with extra virgin olive oil and then seasoned with granulated garlic and Montreal Steak Seasoning, seared in my cast iron skillet which will be flaming hot, then thrown under the broiler until properly done for each of us (Beorn medium-rare, Hyperception rare, me...just seared on the outside is fine, thankyouverymuch).
With that will be southern-style green beans with pearl onions and smoked ham hocks and baked Yukon Gold potatoes with butter and sour cream.
