Ramsay's got 15 Michelin stars in his career so far, one of his restaurants still having 3 stars - the highest category possible. I trust his expertise. If he toasts vanilla seeds I will not question that. Also I don't want to be yelled at and being called names by him.

Took me a while to find a written version for those of us unable to catch all of the details of a recipe via broadcast, but I finally found it.
Fragrant Spiced Rice Pudding
Chef Gordon Ramsay Ultimate Cookery Course
1 vanilla bean pod
3 cloves
2 cardamom pods (cracked)
1 stick cinnamon
2 cups coconut milk
2 tablespoons sugar
1 cup milk
2 tablespoons cream
1/2 teaspoon lime zest and you'll need another 1/2 teaspoon lime zest
200 grams pudding rice (short grain rice) or risotto rice
2 tablespoons mascarpone cheese
2 egg yolks
Lightly toast vanilla seeds and pod, cloves, cardamom pods, and cinnamon stick broken in half. Just a couple of seconds.
Pour in coconut milk, sugar, milk, and cream. Boil.
Add 1/2 teaspoon of lime zest. Boil.
Pour in 200 grams of rice pudding. Bring to a gentle simmer for 3-5 minutes.
In a separate bowl whisk the egg yolks. Add the mascarpone cheese and whisk until smooth.
Turn off the gas. Add the yolks and mascarpone cheese into the rice pudding. Stir until thickened.
Add 1/2 teaspoon of lime zest on top. Do not stir.
Put into the oven at 200 C for 15 minutes to finish cooking the rice.

You may hate his strong language, but this man doesn't just simply have passion for cooking, he's got passion³. Didn't get all them Michelin stars for nothing. Despite a troubled childhood he's a very intelligent, wordly wise and multi-lingual guy. A master of psychology. And he is right most of the time.
I tried a few of his recipes and they all worked very well. His kitchen tips are essential.
The German dub of his shows show me that Germans can't really swear.
