This one may not qualify as a knock-down, but it is long--yet all too short.
The pie fight in The Great Race. I still watch this 160-minute movie, with all its dated silliness, just to see these 5 minutes.
Consider that, after filming the scene, there were 300 pies leftover for the crew to eat. That's ALOT of pie.
Sure, no fists were thrown, but everyone in the scene took one in the face. And Jack Lemmon fell into the same layer cake twice.

does anybody know the name of the western in wich during the muddy fight the bad guy gets onto the star's horse to ride away, the star whistles, the horse stops dead in his tracks and bad guy goes flying off? then, after the fight star goes riding away, bad guy whistles, star goes flying off? saw it as a kid, can't remember. maybe james garner.

yeah, possible it wasn't garner. i do remember somthing about the star puting loco weed into the horses drinkin' hole makin' them go nuts. i asked my old man who i saw it with, he says they did that in just about every western made. i'm still searching.

I'll add the big showdown in Roadhouse. Every moment was nothing but two guys trying to take the other off of the planet. Intense! And some decent choreography.

I love the bar fight scene between Big Boy (Woody Harrelson) and Pete (Billy Crudup) against Jim-Bob's hired hands in The Hi Lo Country, "He hit me over the head with a bottle!" and the awesome nonstop fight between Lt. Frank Keller (Al Pacino) and Terry (Michael Rooker) in Sea of Love.

The fight from Old Boy where O-Dae Su fights about 15 guys in a corridor - all in one single camera shot. Absolutely incredible fight scene.
For a sword fight, I'd go for either Tim Roth vs Liam Neeson at the end of Rob Roy, or Tony Curtis vs Kirk Douglas at the top of the chapel tower in the Vikings.
The fight between Alexander Gudanov and Bruce Willis in Die Hard is just bloody brilliant.
