I don't think they would be very "Hey, this looks like something I'd want to read, let's take a look at the liner notes..." But they're definitely consistent, and the imagery/symbology is appropriate to the stories.

There is no indication that the ship is made of "wood". You may be assuming that based on the "plank like" structure. Consider, however, if each of those "planks" were really as wide, proportionally, as the image shows, at Giant scale, those would have to be at least 10 feet wide, possibly more. Other than Pitchwife's repair technique, we really don't have any insight into the physical construction of a giantship's hull. I believe it was stated in the text that there is a "grain" to the material. It could very easily be built up from wide bands of cast stone, rather than a monolith. There are solid structural and architectural reasons that such construction might even be desirable.

That said, as mentioned before, I don't personally consider the artwork particularly attractive. But it isn't supposed to be attractive to those of us who have read the books for years. It is supposed to draw new readers, with contemporary tastes in artwork.

Good point IS and based on that its still not great .. but if it attracts the contemporary millennials and the centennials, the billenials more power to them.

Its about the content anyway .. cool point about the ships material composition. What other than wood do you think the ships could be constructed from, if not wood?

The ship is made of stone - that's pretty explicit in the text. But the fabrication process - beyond the patching performed by Pitchwife - is left to our imaginations. We only know the methods are different from the Gravelingas' stone lore. (The Giants were also responsible for the construction of Revelstone, recall.)

No need for gravity to work differently. It is the air within the hull that floats the boat, not the material the hull is made of (otherwise, there wouldn't be a single steel vessel afloat. :)

This is true. The cover art is created and selected independently. There is a whole specialty in publishing around book covers.
