Seafood pasta anyone?

Spaghetti vongole e scampi - with clams and real scampi (not prawns), tomato, garlic, a dash of white wine and flat parsley.

Last night was a sheet pan chicken cacciatore. Lined a sheet pan with parchment, then laid out skinless thighs and thick slices of onion, bell pepper, and zucchini. Seasoned well with salt, pepper, and Italian herbs. Roasted that at 450 for 15 minutes. Flipped the chicken and veggie pieces, then added chopped garlic, sliced mushrooms and stewed tomatoes. Sprinkled some wine, reseasoned, and roasted another 15 minutes, then served.

So good, despite the simplicity and keto-friendliness. Bonus: cleanup was a knife and cutting board. The sheet pan was pristine under the parchment.

Uh, no. The sheet pan wasn't pristine under the parchment, which is why it went through the dish washer cycle. But, it was only juices which leaked at service, which means they didn't get baked on and were easily removed.

I had steak, baked potato, gem squash, and mushrooms fried in an obscene amount of butter with a dash of red wine and balsamic vinegar. :D

That's my favorite amount of butter. I think I've used that exact measurement before.

:lol: I do tend toward that amount far too frequently. My red wine sauce uses that measurement as well...I've actually forced myself to make it less frequently now because I'm sure it can't be healthy. :D

Anyway .. you had me at baked potato 😂 I loves me spuds ..

Well I just ate a Whisper and had some yoghurt with apple and rhubarb .. and Im enjoying a whiskey and listening to the rain pouring down outside .. so not quite thinking of dinner .. but I havent had much food while away .. apart from that one night where I cooked .. so on reading the words "baked potato" .. I feel inspired .. so told Trev about it ;) .. and hes making ;) baked potato and chicken kiev .. so nice to be home :mrgreen: :P

Everything is bad for you! But most things are okay in moderation. That's my general philosophy about food and whatnot. I've cut back on butter (one of my main weaknesses), mainly because there's local olive oil that's really good - but if I ever get stuck in a desk job I will definitely need to be more careful with what I eat.

I totally agree with you Sors about the moderation thing .. everything ;) in moderation .. except for those things you wouldnt eat in a pink fit 😬

mmm... the irony of the situation youre in Av :( sadly but true. Try to take breaks and eat.

Tonight Trevs making me a delish birthday dinner .. butter chicken, cos a favourite with mint raita and homemade naans. And hes made a strawberry cream cake. Sooooo amazing .. cant wait to try it.

Yeah Im the last person to be saying .. just eat regularly even if you dont feel hungry .. cos I totally get that .. stress has the same effect on me. And its hard to eat if youre not hungry ie dont have an appetite.

You got to look out for yourself tho .. evenso.

Listen to mummy sky .. she knows best .. but doesnt always do best herself :roll: ..
