DW graduates and... makes muffins?!

Hey Guys,

Just wanted to break my arm patting myself on the back over completing my MBA program (3yrs of late nights and paper-writing weekends). What a relief.... I gradjeeated! I'm a full-fledged tank paratrooper (or Indiana Wesleyan University MBA).

I'm still working by day as a mild-mannered reporter for a daily metropolitan newspaper (or pharma IT quality), and will continue to do so for a long time yet, but the wife & I are in the beginning stages of a wholesale & internet-retail bakery business that will specialize in low glycemic index muffins - i.e., muffin tastiness with some extra nutritional punch, and specifically without the carb coma. We've already got a few awesome recipes tested out, and are in the process of putting together our early sales plan, logos, marketing materials.

So... if you happen to be Type II diabetic, or know someone who is, drop me a note if interested in doing a little early market research on what you look for in baked goods, and eventually some product tasting by mail. The email address for that is info@madmuffinco.com

But enough about muffins. the best benefit of no more evening classes and homework is that DW gets to hang with the Watch crew a little more frequently, and may end up with so much free time that he could even scrounge together a submission for the 2008 Anthology.... but that is another story.

Sooo...are these low-carb muffins gonna be, like, lowfat and all, too, or just for diabetic types? Not expecting you to give away any trade secrets or anything, mind. Just, y'know, curious.

Diabetic types need low fat as well aliantha. Unless they're following Atkins or some such. But the typical glycemic index and exchange plans all recommed lower fat for diabetics.

Can I get on the tasting list even if I don't have diabetes? I do have excellent taste buds. :biggrin: I'll even pay for the shipping!

I'm sure you're right. (A lot of Type II diabetics are overweight, after all.) All I know is, when the lowfat craze kicked in, a lot of manufacturers ramped up the sugar content in stuff so it would taste like something....

They sure did. Low fat did not equate with low calorie, that's for sure. Nor low carbohydrates for those who had to watch those. So, for low carbohydrate, sugar will definitely be out. But there are other sweeteners with fairly high caloric counts that balance out in carbs, at least if you use sugar alcohols and figure net carbs instead of whole carbs.

What approach are y'all using to count carbs dw?
