julie made ground turkey with veggies. kind of a pot pie without bread or gravy.

It's one of these days when you stand up from the dinner table, look at your plate and say "OMG, I can't believe I just ate a complete side of a HUGE salmon alone. With crispy skin. The Missus doesn't like the skin so I got my fair share of Omega 3 fish oils today.

Okay, I had a fantastic meal like 2 weeks ago that I am still thinking about. =)

For Mother's Day, we went out to an asian place and got:
Shrimp fried rice
Thai green curry
Mango freeze (made mostly of blended mango!) with boba pearls and with cream on top.

We don't go out to eat much, and I haven't had green curry in a LONG time, so yeah this was AWESOME.

Also, I am drooling over that salmon, vader

We had a cookout with our neighbors. Bloodguard Bob dry rubbed a tri tip with his own spice blend which he keeps secret from me. He also made seven layer brownies. I made a green salad with tossed organic greens, chopped tomatos, julienned carrots and hunks of celery tossed in a light but creamy homemade blue cheese dressing and I also made a macaroni salad. I used the little tiny salad macaroni, cooked it al dente, added mayo, mustard powder, paprika, salt, pepper and a liberal whallop of beaver brand sweet hot mustard and a dash of red wine vinegar. For the crunchy part I finely diced a red, an orange and a yellow bell pepper, carrots and celery. It was my best one EVAH! They had thin sliced marinaded steak with soft flour tortillas and hot dogs. We at like pigs and it was wonderful. It was also nice to just hang out with the neighbors instead of us just being over there to work with the bees. The mac salad was a special hit as we asked if they wanted some of the leftovers and they immediately bogarted the rest of the mac salad. I kinda wanted to bring some home but hey, I can make more. :biggrin:

Now that the Copper River salmon run is past its (very pricy) initial rush, tonight I made a Copper River sockeye salmon fillet with lemon, garlic, soy and dill. Accompaniment was a cornbread dressing with sweet onion, red bell pepper and spinach.

Having arrived in Albuquerque on Wednesday, a day prior to the scheduled Elohimfest kickoff dinner at danlo’s, Menolly and I tried the local New Mexican cuisine at Cocina Azul. Wow!

Since Dam-sel is a New Mexico native, I know the state’s signature fare pretty well. Nice to occasionally know more about the food than Menolly does… What Cocina Azul provided was an outstanding example of what New Mexican cuisine should be.

We began with Albóndigas (meatballs) in red chile. Menolly chose huevos rancheros “Christmas style” (both green and red chile), adding a third egg, guacamole and sour cream. She also added a side of a chile relleno with red chile. I went with a carne adovada plate with red chile.

Her initial beverage order was an unsweet iced tea with lemon, but she eventually added a unique margarita made with agave wine rather than tequila. Along with plenty of water, I had an Imperial Red Ale from the local Marble Brewery.

Flan completed the evening’s meal perfectly.

Last night was momentous. For the first time ever I cooked using something I'd grown myself. Anticipation was high, result was even better :biggrin:

I put on some fusilli pasta.

I sliced three small courgettes (zucchini) (half cm slices) and fried them for about three minutes in butter. salt and pepper added. This was poured over the drained pasta. Another nob of butter added to pasta. Some more salt and pepper. Gave it a good stir and entered tastebud heaven.

I had to fight every instinct I had, not to put any form of garlic or chilli in there.

That sounds like a perfect summer dish, Stone! I'm glad to hear the "fruit of your labors" turned out so well.

I had the shakes. It was just so wrong!

But it turned out right :lol:

By the way I didn't grow the pasta, salt, pepper, or butter - just the courgettes.

Last night's dinner: ricotta spinach pie (good but disappointing)
Dessert: a sweet, creamy ricotta pie with chocolate chips in it.

Had an Italian themed evening with some friends last weekend. We made a Tiramisu for dessert, and it was awesome! I've had a few disappointing ones in the past, so I was relieved it tasted good.

julie mad a wonderful salad.

iceburg lettuce (suited the salad, but not a favorite), red peppers (mild) , bell peppers, bermuda onion, roasted chicken, blasamic vinegarette.

Just made a very successful lasagna. With onions, capsicum, garlic and a very cheesy cheese sauce. :D My flatmate is going to be surprised when she gets home.
