One of the best "comfort" dinners going. I'll have to bake up a huge batch of it this weekend as part of our Easter dinner. I think home baked mac & cheese is the favorite food for both of my kids (right up there for me, too). 8)

Since I'm working the rest of the holiday weekend, we had our holiday dinner tonight:

fresh fruit
green salad
cole slaw
potato salad
corn on the cob
steamed baby potatoes
stadium brats
baked beans
dinner rolls
a couple of different ice creams to choose from
chocolate merengue pie

Ooo, my FIL makes the best grilled brats from Johnsonville fresh bratwurst. He was born and raised in Sheboygan, WI, who bills itself "the brat capital of the world."

I don't know about that, but his grilled brats are the best. B"H he's taught me how to do them.

Anyway, I'm in the first week of the induction phase of Atkins, so tonight was lemon pepper rotisserie chicken from Publix and southern-style green beans.

Paul and I both have started low carbing. So tonight is Chicken Divan with a home made white sauce instead of canned cream of mushroom soup, and a nice tossed salad.

Beorn will eat the same, but can have a slice of toast with it if he wants.

Planning whole roasted Bell Peppers, stuffed with couscous, mushrooms, (and lamb for me, but not the vegetarian GF) and drenched in gravy.

(Whether I'll actually go to the effort, (especially of making the gravy) remains to be seen.) ;)
