In my experience most catering establishments have a continually changing, inexperienced waiting staff. Most waiting jobs have poor to abysmal pay in return for tough, unsociable hours, tipping or no. The whole industry is utterly reliant on treating waiting staff like crap. They know they can't afford to pay more without raising their prices and if they raise their prices their business will suffer. The bottom line is that people aren't prepared to pay what it would cost to make waiters' lives more pleasant.

My advice to anyone who takes a waiting job is: don't get sucked in. The catering industry consume your life utterly and by the time you're high enough up the ladder to start living again, you'll wish you had some of those years back.
