I like them best made into soup. On their own I find squash, in general, kind of plain. Pureed and served as a soup, it's very good. Good on a cold day! If you ask in the galley someone will give you better ideas.

Ah, I think my daughter said something about potato and leak soup. Perhaps I will give the squash to my son as he enjoys cooking and may even know what to do with it!

NOOOOOO!! Damelon is right, make soup!! What is wrong with you Brits? Squash is the stuff!!! I know it's native American in origin but I think you can handle the dark side. :D

Emotions are up and down regarding Christmas, family issues, and so on. But I'm kind of okay with that. Christmas is usually like that, especially when we're far from family and my Mom and sister are both going through rough times right now.

Iolanthe, I have a great recipe for butternut squash that involves cooking, mashing, and incorporating it into a sauce for a pasta casserole. Mmmmm...

peter -- feel better soon!

My kids are getting to the age where they'd rather have (and need, being underemployed twentysomethings :( ) money than stuff. Sure makes the gift wrapping quicker. ;)

We had a lovely Yule -- opened all the gifts just after midnight Thursday, then I made Cornish hens with wild rice "stuffing" yesterday. Now that the stress is off, I can sit back and enjoy my next three days off. ;) Oh yeah, I have book club here tomorrow. Luckily they're not nuts about tidiness, so I don't have to be in a cleaning frenzy today. :lol:

A bit in limbo today. Big Christmas shop done last night. Ironing pile to reduce this morning, this afternoon off to take a wreath to Mum and Dad in the village churchyard where their ashes now reside. Almost Christmas, but not quite.

My son lost his financial aid, so he may not be finishing college any time soon. What I don't understand is that the people who keep changing their minds about it have had all the information all along but now all of a sudden they're going, Oh look at this, guess we take your aid away again, thanks for playing. :x

So many possible things to worry and stress about, it's stressful trying not to stress out. :?

What is he majoring in? Is he in school in the U.S. or in Africa?

So many possible things to worry and stress about, it's stressful trying not to stress out. :?

You've got to do this Iolanthe - Butternut squash can be cooked the same way as a turnip and served with butter and pepper mixed in and is a lovely, lovely veg!

(Somewhat recovered today - just deciding what I fancy for tea. Mmm - maybe some butternut squash soup ;) )

If it's anything like turnip I shall not like it. When I was in infant school they used to serve up pease pudding. It was ghastly. I hated it. But they stood over us until our plates were clean! I think I'll save it until Boxing Day and try it with the cold turkey!.

Pease pudding is great, but it only has one correct use: as filling in a ham and pease pudding sandwich.

Yuk. As I remember it was served with ham and watery gravy, and probably lumpy mashed potato. The other great hate was tapioca, or frog spawn as we used to call it. Oh, and spam fritters - the mixture of spam and batter was nauseating.

Silly! Nothing like turnip... presumably he's just saying you can cook it like one.

Butternut squash are a lot like pumpkin, except sweeter and more tender!
In our family, nearly all the "pumpkin pies" we make are from butternut squash.
And plus... easier to process, since they have a thinner skin.

Sounds like a plan.

My son is in the US and wants to be a youth worker. He's really gifted in that area but all that high energy makes it hard for him to focus.

I feel like we all need a :hug: . Merry Christmas.
