That is correct. Acid splash would bypass spell resistance.

Acid splash does 1d3 damage. So... it would work, but it wouldn't be very helpful.
The theory of it goes that your magic creates a blob of otherwise mundane acid, then flings it through the air at your target. Once it hits, the damage is entirely from the non-magical acid. So, there's no spell to resist, at that point.
