Chocolate, Glorious Chocolate

My love of all things chocolate has been well documented. :) ........be it ice cream, brownies, easter eggs, syrup, cake....whatever.
If you have a great chocolate recipe that you feel you must share....please by all means do so. Or even if you just want to vent your chocolate feelings....here is the place to do it :)
My contribution:

Homemade Chocolate and Cinnamon Ice-cream

500ml milk (2 cups)
3 cinnamon sticks halved
170 g bittersweet chocolate, chopped finely
8 egg yolks
110 g caster sugar (1/2 cup)
300ml thickened cream

* Place milk, cinnamon and choclate is large heavy-based pan, stir over low hear till chocolate has melted. Remove from heat, stand 5 mins, strain into a jug and discard cinnamon sticks

* Beat egg yolks and sugar in a bowl with electric beater until thick and creamy. Gradually add hot chocolate mixture to egg yolk mixture beating until just combined.

* Return mixture to same pan and stir over heat, without boiling, about 15 mins or until mixture thickens slightly. Remove from heat, transfer to large bowl, cover surface to custard with plastic wrap and cool. Refrigerate about 1 hour or until mixture is cold.

* Sit in cream, then pour into lamingtom pan, cover and freeze until just set. Chop icecream roughly, beat in a large bowl with electric beaters or process until smooth. Pour into loaf pan, cover and freeze until firm.

Its a little fussy, but the end result is to die for :)
You can use the 8 egg whites to make a pavlova or meringues :)

mmmmmmmmm.............. It's freezing right now. There's a wonderful chocolatey smell wafting through the house now.

I do believe that that is the most wonderful chocolatey recipe that I've ever tried. :wink: I'd post one of my own, but it's 11:38pm here. ::shrug::

Damelon, its really fine white sugar...you guys in USA might have another name for it. :)

It does sound like what we would call powdered sugar. Infelice, is the sugar you are talking about so finely milled that it has the consistency of baby powder? :?:

No not quite Dutchess.....it still has fine crystals .....Its used to sugar donuts and stuff sometimes. You can use ordinary sugar in the recipe if you want to, but it takes a lot longer to dissolve.

caster sugar is known as 'superfine' in the states. :)

Hopelessly Useless Chocolate Fact #1:

Chocolate is a moderate source of iron. It provides about 8% of RNI of iron for a woman and about 18 % for a man.

This means women need to eat more chocolate. :)

Chocolate is one of those things that if it's not around, I don't miss it; but if it's around I'm tempted to nibble away until it's gone. :?

I have that problem everytime I go through the checkout at the super market. The chocolates are always right there.........and I can always smell them........and they call out to me........and I must have one.
I need to adopt Damelon's philosophy. :)

Only for me it would be: Hear no chocolate, see no chocolate, eat no chocolate. :)

When I was in Chicago last summer we went to the Field Museum of Natural History. They had mounted a huge special exhibit all about chocolate. I swear to you, they piped in the SMELL of chocolate, and then to leave the exhibit and visit the rest of the museum, you had to exit via a chocolate store. :?
Needless to say, every visitor was making a purchase. ;)
