I see this option when I open my profile, but I don't what it is.

I was trying to add my old title (Riddlemaster) to the Gap Into Spam title that Jay gave everyone as a joke, but it's not clear if that's where to do it, or if that's something else entirely.

Yep, that's where you give yourself a custom title.
