Heraldry HElp?

For a story I'm writing, I need to (quickly) know the proper way to describe these two coats of arms:

I think the cross may be Knights Templar, but not totally sure.
The first one might be of interlocking chevrons and chevron: Protection; Builders or others who have accomplished some work of faithful service.
They interlock to form two mascles and mascle: Persuasive

Edit: it's not Knights Templar it's the Maltese cross

So the second coat might indicate: doctor, or a family long involved in medical service.
