The Galley's Index of Recipes

There are vegetarian recipes scattered throughout, but in particular scroll down to Entrees>Vegan and Entrees>Vegetarian. We have some excellent cooks right here on the Watch!

Some of my own favorites are:

African Vegetarian Stew (even though I am sure Av and deer would argue with the title)
Grilled Tofu Satay
Sloppy Lentils (and that's the first recipe in a thread here in the Galley devoted to vegetarian recipes)
Mixed Mushroom Stew
Mushroom Stroganoff
Chili RelleƱo Casserole

...etc., etc., etc...

Really, the hard part is getting the damn vegetarians to stay in the pot while they're cooking. For a bunch of meat-starved beanpoles, they can put up a pretty zesty fight. Then, of course, there's the whole issue of what that sudden rush of their adrenalin does to the flavor of their meat.

So usually I try to take them by surprise. Chloroform and ether can sometimes work fast enough, but if you're trying to eat healthy (and if you are specifically looking for recipes for vegetarians then I'll assume you are), then you don't want those nasty chemicals in your meal. Since most cities have very strict ordinances on discharging firearms, guns are right out, not to mention there's the hassle of having to track them if you don't get a good kill shot.

So the best way that I've found (and I'm always open to other suggestions) is to get 'em while they're sleeping and go for the quick kill (knife to the base of the skull severing the spinal cord works very well). This of course adds the complication of having to transport the vegetarian back to your kitchen, but with a little prior planning, the inconvenience can be minimized.

As far as recipes, I find that (as with most meats) slow cooking in a Crock Pot with some Worcestershire Sauce, red wine (Merlot is fine), black pepper, potatoes, carrots, and onions will yield great results.

haha. well, I eat bacon. But the ol lady doesn't.

I've settled on some delicious enchilada's, spiced corn on the cob, and some sort of mexican jam-filled pastry.

I just had huevos rancheros for breakfast this morning... :D

...no danlo, they didn't compare to what I had in Albuquerque...
(no huevos rancheros will compare to the ones I had in Albuquerque)
but for Gator Town, they were pretty good.

I made an awesome eggplant lasagna last night. It's easy, but takes just a tad bit of work:

You'll need some pasta sauce (homemade or canned), shredded mozzarella cheese (or sliced if it's fresh), about 3-4 eggplants and some olive oil.

Slice the eggplants lengthwise so they fit in a baking dish. Brush each slice generously with olive oil on both sides and season with salt and pepper. Grill each slice about 2-3 minutes each side, or until golden brown and slightly soft.

Layer your baking dish as such: sauce, eggplant and cheese. Top with some parmesan cheese and stick it in the oven until the cheese is bubbly and slightly brown on top, about 15-25 minutes.

Buy some Quorn and look up chicken recipes, Balon!

(but make sure you buy the right one - there's a different type of quorn that's a mince substitute)

Quorn is fabulous!
But, some vegetarians aren't into meat substitutes.
balon would have to make that call, knowing his Lady and all...

I wonder how people would feel about eating fermentor grown dehydrated bovine or suiline stem cell culture proteine.....

That would be to beef/pork what Quorn is to mushrooms!

It's an ABOMINATION to a former mycologist I can tells you!

Wow, I had to search to page 4 to find a vegetarian thread.

Anyway, been eating a lot of noodle dishes: grated brocolli, thinly chopped chinese lettuce and red onion, moong split beans, red green chillies, garlic, tomatoes, ginger, spring onion, herb and spice, combinations.

Made a nectarine crumble tonight, adding choc chips and cinnamon.
For anyone dieting best leave out the sugar when boiling the nectarines, and hold the choc chips and extra thin and sweet semolina.

I made a Chicken Marsala recipe, using Quorn Naked Cutlets for the chicken and Imagine No-Chicken broth for the, well, broth. I did the following Instant Pot recipe, but most likely the Quorn and Imagine will work in any Marsala recipe.

Mostly I'll eat Quorn burgers and sausages. I actually miss succulent chicken and lamb cutlets, juicy steak or beef, crispy bacon ... but the taste of blood just doesn't agree with me anymore.

Have only tried Quorn chicken once and wasn't keen on it. Maybe it just needs a little practice. :)

Interesting. I think I've only seen Quorn chicken alternatives. I don't eat vegetarian often, so I haven't really looked for other things by them.

I've also made taco pie, subbing tvp for the ground beef. That seemed to be well liked as well at a Game Night pot luck. The photo is of the meat version, but it pretty much looks the same using tvp.

Grilled portobello mushroom:


Clean it. (Remove stem and comb, then wash.)

Drizzle with olive oil and add garlic powder. (Or seasoning of choice.)

Grill to taste. (I like mine crispy around the edges.)

Serve on a hamburger bun with fresh spinach and spicy mayonnaise. (I add cayenne pepper to plain mayonnaise. It works fine.)


This a quick and easy replacement for a hamburger so vegetarians don't feel left out of the barbecue.


Grilling is also a great way to prepare tofu. Skewer it with some vegetables and add a spicy sauce. Once you've seared it, the tofu tastes like actual food.
