The Oatmeal Thread

I used to eat Quaker oatmeal. Oh, how foolish was I! Little did I know that they were rolled oats. Rolled oats are overly processed, causing them to lose some of their nutritious qualities.

In my spiritual quest, I discovered this web page:

www.netrition.com/mccanns_oats_page.html

And just today, the holy grail came in the mail. I have made it to the Promised Land:

kevinswatch.ihugny.com/phpBB2/album_view.php?id=668

Okay, so maybe I'm the only enlightened health-nut around here. Fine, I'll be a crazy minority-of-one. But I don't mind being crazy about oatmeal! Let me know how you like your oatmeal (flavor, toppings, etc.)

As I said, I eat steel-cut oats exclusively. I usually always add a handful of raisins and some banana slices. Perfect way to start the day!

My spiritual quest for oats led me to Alton Brown. Ok, I was lounging around watching the Food Channel. Here's a link to some of his interesting oat recipes

I had oatmeal for the first time in decades this very morning!
It was tasty.
But I guess it was the processed kind though.
I'll have to look for "steel cut" next time I shop!
Good tip.
Thanks.

I ruin all nutritional value of oatmeal by adding about a quarter stick of butter, and a pile of brown sugar.

I'm eating McCann's right now for the first time. Oh god, the texture! SO CHEWY! *passes out*

One thing, though: you'll have to acquire a taste for steel-cut oats, as they aren't flavored (no strawberry, cinnamon roll, etc.) First time I ate it, I was unsure if I'd continue doing so, but after the second eating I went nuts for 'em.

We get unflavoured rolled oats here. Use them for my sons breakfast. I can't stand oatmeal. Raw rolled oats with milk and sugar kicks butt though!

Anything with too much roughage in the morning makes me vomit. That includes oatmeal. :|

I love oatmeal/honey cookies, though. :) Maybe when I get home I will dig out my recipe and post it. :)

Mmm, oatmeal cookies.

Well, I buy steel cut oats from the Bob's Red Steel Mill brand, as McCann's can only be ordered over the Internet in my town. Blast!

I've also gotten back into rolled oats, as Bob makes an extra thick variety of the rolled out. Couldn't resist!

I still garnish my oatmeal with raisins and bananas. Mmm yeah. Oh yeah: also gotten into Museli. Great dry cereal, there.

We can get McCann's at one of the big super market chains (Meijers) and also at a cool little import store called Cost Plus World Market. I love that little store - you can get everything from scone mixes to Aussie Outback wild flower honey. 8)

Honey Oatmeal Cookies

1 1/4 cups sugar
1/2 cup shortening
2 eggs
1/3 cup honey
1 3/4 cups all purpose flour*
1 teaspoon baking soda
1 teaspoon salt
2 cups oats (quick cooking or regular)
1 cups raisins, dried cherries, or dried blueberries (optional)
1/2 cup chopped nuts (optional)
flavor to taste with cinnamon, nutmeg, vanilla, lemon peel, cloves, and/or allspice (depending on personal taste - any or all are optional)

* if using self rising flour, do not use baking soda or salt

Heat oven to 375 degrees farenheit. Mix sugar, shortening, eggs, and honey. Stir in remaining ingredients. Drop dough by rounded teaspoonfuls about two inches apart onto ungreased cookie sheeet. Bake until light brown, about 8-10 minutes. Immediately remove from cookie sheet. Should make about 5 dozen cookies.

Ha! It's not just me, then.

I like oats. Tasty, good for me, and if I have any left over in the car for some reason, they make a convenient bribe for the horses. Such a versatile grain.

Came across this thread as I'm archiving recipes into The Cantina. LF, if you still eat steel-cut oats, and want a little flavor to them, this recipe worked great at Beorn's Bar Mitzvah brunch.

You do need to like the flavor of apricots, although I suspect any dried fruit will work in their place. Perhaps you could try dried apples, cherries, sliced strawberries or raisins.

Overnight Oatmeal

Image

8 cups water
2 cups steel-cut oats
1/3 cup dried cranberries
1/3 cup dried apricots, chopped
1/4 teaspoon salt, or to taste

Combine water, oats, dried cranberries, dried apricots and salt in a 5- or 6-quart slow cooker. Turn heat to low. Put the lid on and cook until the oats are tender and the porridge is creamy, 7 to 8 hours.

Stovetop Variation
Halve the above recipe to accommodate the size of most double boilers: Combine 4 cups water, 1 cup steel-cut oats, 3 tablespoons dried cranberries, 3 tablespoons dried apricots and 1/8 teaspoon salt in the top of a double boiler. Cover and cook over boiling water for about 1 1/2 hours, checking the water level in the bottom of the double boiler from time to time.

Menolly's notes: This does make a large amount, but it can be refrigerated and microwaved the next day with the small addition of some milk and butter.

Thanks, but I'm a cold cereal man now. Steel-cut oats take to long to cook. Heck, I don't even have the attention span for rolled oats!
