Question re Sandgorgons ... why are they named after cheese?

I think the sandgorgons were named the same way the ur-viles (also known as "demondim spawn").

"Sandgorgon" comes from the name of their makers - the "sandgor". But the sandgors were all killed, and were then "sandgor-gone" (the "e" is silent, so the name was shortened to "sandgorgon").

In the Last Chronicles, we will undoubtedly find out that Nom (oops! did I say that out loud?!) used his new intelligence to form another race of beings, and taught the other sandgorgons to do the same. This new race will be called the sandgorgon-zola.

Is that what you meant?
