One of my favorite treatments/echos of Roland is the Robert Browning poem "Childe Roland to the Dark Tower came", which I recommend highly to all fantasy fans, even those who don't care for poetry. As was pointed out by one of the members of Mhoram's board endless.theland.ws you can run across references to it in very diverse places in fantasy, science fiction, and horror.

Marion Zimmer Bradley's Mists of Avalon
Mallory's Morte de Arthur
Guy Guvriel Kay's Fionovar Tapestry
I have heard great things about some Arthurian books by a man named Cornwall (or is it Cornwell?) but haven't ever had time to read them.
