Me, I've got a Martin DX-1 that I love, it has a deep rich sound, perfect for bluegrass rhythm. I also have a nylon string Aria that I use for fingerstyle. My fingerstyle tone SUCKS, I'm truly pathetic. I am known in these parts as a good rhythm player though.
When you're talking bass in bluegrass, there are not many names that come up. T. Michael Coleman and John Cowan spring immediately to mind, but mostly bluegrass bass involves the bass fiddle. IMHO the best bluegrass bass player is Barry Bales, who plays for Allison Krauss and Union Station.

I picked up matching 6- and 12-string Charvel acoustics off Ebay a couple of years ago for $150 each. They're not Martins, but I have yet to hear the Martin that sounds $1000 better than either of them.

Stevie Ray Vaughn had tone that completely bumfuzzled me,the guitars sound was bigger than life.Check out Damn Right I've Got The Blues by Buddy Guy,his guitar tone is otherworldly to me.As far as specific examples of sounds I really like,I would have to say that Tony Iommy's tone on N.I.B was really ahead of its time,and I have always just drank up Page's guitar tone on Black Dog.The tone on Black Dog was achieved by running the guitar straight into the board,the guitar produces more amps(or voltage?) than the typical line level signal,which overloaded the input,thus crunchy tone,Page also used a heavy handed compression effect.
Not to mention he's (Page) also using a Leslie on it as well. Page's rig was disgustingly simple, but he always sounded great.
