I'm skeptical of Sweeney Todd--mainly because Tim Burton's been hit or miss lately (Sleepy Hollow and Big Fish were great, but I could've lived without Planet of the Apes and Charlie and the Chocolate Factory). (sorry to double post...) I have heard that he plans on making the Gore like Kill Bill. I am already a huge Sondheim fan, unfortunately I live in a good (small) theater town that never sees big plays. (I already have tickets to sweeney the next time it comes to town!) There are some projects that I just can't imagine anyone but Burton doing, and this is one of them. (I would also LOVE to see him do a new Wizard of Oz based off of the book, it's my wet dream). Burton does seem to be hit or miss, but he's got more Hits (for me) than most directors that's for sure.
