salmon burger toppings?

Magickmaker doesn't eat red meat -- or, generally speaking, anything that's been made to look/taste like red meat. So I'm going to try salmon burgers for 4th of July on Friday.

I bought pre-formed salmon burgers at Trader Joe's last night, so that part's covered. But I'm wondering what to top them with. Somehow, ketchup and mustard just don't seem right.... Well, maybe the mustard would be okay. But you get what I'm sayin'. And she generally doesn't like mustard either. :roll:

Any suggestions? We won't be grilling out, just cooking them on the stovetop or under the broiler. I usually make salmon with just lemon juice and dill, but that sounds a little too plain for a burger. Dilled mayo, maybe?

Try a chipotle mayo and some mixed greens. That's the way they serve them at the Crepevine here in SF and they are freaking delicious. :biggrin:
Now if I could just find a way to wear live bees as jewelry all the time.....

If you shop at Trader Joe's, you should also be able to find TJ brand Mango Chutney. Its good on both Salmon and Turkey burgers.

[digression] My wife makes awesome turkey burgers - she claims its a custom version of a Rachel Ray recipe. They are very good.[/digression]

I have no idea, but my first thought would be to concoct a spread with mayo, horse radish, spicy mustard, and worcestershire.

The remoulade lucy mentions or anny dill based dressing (sour cream, dill and lemon juice for example).

But don't do dill and other herbs at the same time. Dill is a primadonna and prefers to be on it's own.

Yeah, it can *maybe* take a teensy bit of garlic, but that's about it. 8)

Here's what I ended up doing: I got a bottle of World Harbors brand Maui Mountain Teriyaki Sauce and Marinade, a can of pineapple slices, and a jar of mango-ginger chutney (thanks for the chutney tip, Dukkha!). I put the salmon burgers and pineapple rings in a frying pan with the teriyaki marinade and cooked 'em at medium-high heat 'til the burgers were cooked through. Topped the salmon with a pineapple slice and the chutney, put it all on a whole-wheat bun. Mmmmbaby. Magickmaker skipped the chutney but she thought the salmon with pineapple was very tasty. I've got more of everything so we'll have these again this coming week. Yummae.

I have used this marinade on grilled chicken before and had really good results. I was actually looking for this stuff at the WalMart in Denver before the big grillout, but needless to say, Wally World didn't have it (which is why I picked up that other teriyaki marinade, Jenn). I've only ever seen Safeway carry it here. But it's good.

I haven't seen that brand, but supposedly Soy Vey is good.

I make my own teriyaki sauce, but it is full of sugar...

Pretty sure I am seeing a hechsher on the bottle there, ali. Kof-K, if my eyes aren't deceiving me. Good to know.

I calculated the Weight Watchers Points on this stuff last night, as it happens. It's 1 point for, like, two tablespoons. I can't remember whether sugar is a prominent ingredient or not. Will have to check. The sweetness may come from fruit juice -- it's got some pineapple flavor in there, hence the Hawaiian connection.

Okay, so I'm double-posting. :P ;)

Good news: Yes, the thingum on the label is what you called a hechsher, Menolly. It's a K inside what looks to me like a Hebrew letter? symbol?, and underneath it says "Parve".

Bad news: The first ingredient on the label is our bad old friend, high-fructose corn syrup. Bah. :( It does contain pineapple juice, too, tho.

Yep. The letter Kof, from what I can make out in the photo. Hence, Kof-K hechsher.

That's why I like making my own. It does use a lot of sugar, but it's sugar, not corn syrup.

I might try substituting a quarter cup pineapple juice for a quarter cup of the low-sodium soy sauce I use. See how it turns out.
