I'm with you on that one. I am not at all a beer drinker, but I do like Lambic. I like the raspberry one and the cherry one. (Malik is now thinking how cute it is that I didn't refer to the names of these beers; only that I described their flavors).

I love St. Peters. I hereby know you must have good taste.

As for the lambic ales, those are damn fine, especially when you mix the framboise with Guinness. YUM!

By the way, my package arrived today and is safely stashed in the refrigerator. I would have opened it tonight after letting it chill for a few hours, but after fasting all day, I think tomorrow will be soon enough.

Tonight was the night.

Sadly, I don't have a tulip glass, but I do have a traditional pub pint glass. It had to do.

Grabbing my church key, I removed the cap. The fragrance issued forth right away, even before decanting. This is definitely fresh stuff!

Tilting my glass and inserting the neck of the bottle partially inside, I slowly allowed the dark, chocolate-colored fluid to pour into it. As the glass became two-thirds full, I turned it upright and finished with a nice head on top as the bottle was drained. There was no sediment that I saw, and even if there was, I had no concern about it.

Hyperception nearly started hyperventilating as he saw what I was pouring. But, this was sent to me, so I got first dibs, haha!!

Bringing the glass to my nose, the frangrance once again hit me. What was it...? Lavender? Lavender!! At least to me. Then breathing deeply to maximize the fragrance, I took my first sip. As wonderful as this smelled, I was still slightly hesitant; I am not a beer drinker and generally stay far, far away from dark beers. But, in my hesitancy, I think I was hugely rewarded. Once in my mouth, I swirled the fluid around, just like I do with wine. All I can say is...whoa...

The aroma filled my head, yet the underlying flavor... hmm...

I was told to expect chocolate overtones. I didn't get that. What I did get was a nice woody, nutty flavor, reminiscent of walnuts. This was one pint of beer I believe I would have finished.

Yet, it was not to be. I had promised to share with Hyperception, and wanted him to have some with the head on it. So, he had the next third or so while I not so patiently waited for him to return it to me.

Finally, he reluctantly gave it back. The fragrance in the glass was just as keen as when I first poured it out, the aroma once sipped also. I finished half again what was left, and returned it to Hyperception to do it proud.

The only thing that was slightly "off" for me was the aftertaste. For me, it was a little "soapy." That would be the best way to describe it. But, the next sip would wash that away. If only I had more... :)

What an experience. Thank you Malik for shipping it to me. I have never had a home brew before, and this was simply...awesome.

Thanks a lot for the compliments. Lavender, huh? That would be the hops. They can be either floral, citrus, pine, tropical, "earthy," woody, etc. But the ones I used are very floral in character.

So, no chocolate huh? I suppose "nutty" is close, but considering how much chocolate malt I used, I'm surprised you weren't overwhelmed with roasty flavors (maybe more similar to coffee). I guess it was smoother than I thought!

With my procrastination, it was actually toned down by two weeks worth of aging, so the ones I drank were all more intense. But really, the age you had on it was probably best. Still fresher than just about anything on the market, but old enough to mellow out the rough edges.

The "soapy" flavor was probably hops, too. They have oils and resins that are very noticeable when you pack a lot in there! Hops contribute bitterness (to balance malt sweetness), hop flavor (see list above), and hop aroma (same list).

Malik, have you ever made mead? My friend and I were talking about making some, and were debating on which yeast to use. Apparently she has a friend that uses champagne yeast, but my recipe (from the Back to Basics says to use either vintner's yeast or special mead yeast. And if you have made it, do you have any advice?

Never made mead. Actually, I've never even had any good mead. I'd love to try some, maybe even make it. Ki hates beer, so maybe that's something I could make for her.

Tonight, I had the great pleasure of trying on of Malik's homebrews which he most graciosuly sent to me. It was a porter, from batch 42. Regarding this one, Malik said:
42 should be roasty with a pleasant hop aroma. It's around 5.5% ABV.
Now, my review won't be as eloquent as Menolly's upthread was, but I've got to say that this was really good. Malik, you ought to be proud of a brew like this. :)

It had a thick head, that stood for quite a while, and a color that reminded me of melted dark chocolate. And the smell.....!!! Dear God, man, a "pleasant hoppy aroma" is an understatement! :lol: This was very hoppy, and that's a good thing. :biggrin: The taste was very good as well, and though dominated by hop flavor, it wasn't overpowering as I thought it might be from the aroma. Very smooth as well. And the scent and taste were just as perfect in the last sip as they were in the first. I enjoyed this one very much. :biggrin:

Thanks again for sending this my way, Malik. And now I'm even more excited to try another one. Maybe tomorrow..... the thought of it will help me get through the day :lol:

Menolly, to be fair, I sent Mortice three bottles from three different batches, to make up for the fact that he was supposed to get a shipment at the same time you did . . . but I had a lapse of willpower and drank the last one myself. :oops: So, he waited over two months longer than you did.

Anyway, thanks for the kind words MR. Glad to hear that 42 was still hoppy. If you think that was hoppy, wait until you try 43! It has about 5 times the hops. :biggrin:

BTW, I called it "hoppy porter," but it was basically the same recipe I sent Menolly which I was calling "chocolate IPA."

43 is a similar recipe to Pliny the Elder, if you want to Google descriptions of that. And 44 was the rye IPA recipe invented by Denny Conn, whom I believe I mentioned in PM. That recipe impressed Rogue Brewery so much that they produced it commercially for a while. So Denny (whom I've never met--but he was gracious enough to try one of my brews and critique it for me) is kind of a celebrity in the homebrewing forums.
