Our state fair this year served up "pigs in the mud", which is chocolate covered bacon.

I did not sample. Eww.

But at least those are both proteins...

OTOH, I would have had the same reaction to bacon-wrapped chicken livers when they were first proposed. Come to think of it, I still have that same reaction to bacon-wrapped chicken livers. :throwup:

Bacon Jam?

…..what the heck is bacon jam?...

It is something we’ve been cooking up for a couple of years now on our trailers and for our burgers

…….we take a big bunch of really really good bacon, and render it down...add a bunch of spices..onions, etc..and let it simmer for about 6 hours…give it a quick puree, and blast chill it…and you have bacon jam..

Maybe "bacon chutney" would be a better name...? "Bacon jam" seems kind of, oh, I dunno, misleading.
