Ah - the sigs aren't posted every time by the user, they are stored on the database and the board adds them to the bottom of posts automatically. It's one of the options on the 'profile' link (top of the page).
Some message boards have an option for a user not to see other people's signatures, but after a check I see we don't have that option. I'll look into it a little more.
