OK. Question with a history here. Man enjoys a bowl of Kellogs cornflakes every day for 35 + years before he goes to bed. Favorite food - never tires of it. Nanny state decides to have a war on salt in diet. Chooses breakfast cerials as a good target. End result, more taste in the packet than in the cerial. 35+ years of that last little bit of comfort before bed - that little thing that makes at least the end of the day go well, even if nothing else has - gone. I can eat 4000 calories a day in chocolate, but I can't have a decent bowl of cerial. Question - Can I make it myself to my own taste. How do you get from this (holds up a dry sweetcorn kernel) to this (holds up a golden cornflake). Could try flattening it with a hammer and then baking it in the oven but doesn't sound right and where do I get the salt in?

Help!

found this online

What you will need:
A large stainless steal, flat bottom frying pan
1 cup of finely ground or medium-fine ground corn meal
¼ cup of granulated sugar or powder sugar
2 fine small sifters (one for corn meal and one for sugar)
1 spray bottle for water

Directions:
Place the frying pan in medium heat. Place some corn meal in the sifter and powder the frying pan with corn meal—as thick or as thin as you would like your corn flakes.

Next, fill out the spray bottle with water and spray the corn meal in the pans until it is well moist, but not running.

Do not stir. You never touch it.

Let it cook slowly until the water is halfway evaporated, and immediately sift sugar to taste on top. If you prefer, you can make it plain. Let it cook until the water dries out and the flakes begin releasing from the bottom of the pan. Don't let it burn. If necessary, scrape the flakes out with a metal spatula.
The flakes will be large. Store in air tight container.
That is it. Enjoy your corn flakes!

Wait, there are corn flakes and there are Corn Flakes.
Kellogs is God-tier.
Everything else is .....junk.

Stop and Shop store brand is an exact match of Kellogs.
Shaws store brand is slop.

peter, would it work if you sprinkled a little salt in your milk? Seems like that would be a quicker fix than trying to make your own.

I think that's what he's trying to avoid - corn flakes that are too puny on the salt.

A large, all-iron baking griddle will work as well (picture what 'Cookie' would use in an old western at the cook fire...) and then you can put it in the oven for more even heating, and will be less inclined to futz with it.

Wow! a good solid response and a detailed recipie to boot. Thanks Sarge - the attempt will be made (though it may take a little while to assemble the ingredients and the courage - I'm stepping into hallowed terratory here you understand) though with my current level of kooking skills I hope for the best but fear for the worst! (spelling mistake was accidental but I quite like it - spelling and cooking at about the same level in my case).

Ali - I've tried the addition of salt to the cornflakes milk and sugar. Definately not the same thing as having the salt incorpoated into the flake itself (in fact the result is positively unpleasant even though in theory it should be the same.)

Well thanks Guys - I thought the process would require 'a machine' or something so am quite suprised to be able to have a go at home. I'm a bit worried about the 'scrape them of the bottom of the pan' bit, though in fairness that equates pretty well to most of my other cooking so I see no reason why I should not be fairly adept at it.

I'll let you all know how it pans out.......pans out (oh well - maybe not ;) .

:lol: "Kooking": LOVE it. Not sure if you're aware of the slang use of 'kook', which makes this even better. In surfing, when someone is just starting out, they are disparagingly referred to as a kook. (This is yelled into their face moments before the fins of a more-experienced surfer run them over.)

OMG - 8O Just spotted this one. What is this 'futz' - some arcane cooking term of which to date I have been blisfully unaware. I have no intention of futzing with my cornflakes, salted or otherwise! :lol:

Didn't know they had messed with coke as well - shame on them! The spider man clone thing gets me thinking. If spiderman is a chimera.....wouldn't he be difficult to clone........ :?

Quick question; 'Is finely groung corn meal' going to be the same thing as 'cornflour'. I can buy the latter in a supermarket, but the former probably only by the hundredweight from a millers yard (full of tough gypsy types - might look a bit silly with my cup in my hand in the que where all the rest are purchasing by the lorry load :biggrin:

In the interests of entertaining the Watch, even if you can get it at the supermarket, I think you should go to the millers yard with your cup... and a camera.

By the way what is 'groung'? Is it like a special Seattle strain of grain?

I would say that corn flour is not finely ground corn meal. You want corn flakes, not corn tortillas, right? Can't find it next to the uncooked oatmeal in the baking isle? I would say it is better to buy corn meal. If you are truly concerned about meal size, the give it a few extra pulses in a metal-blade blender. Just a few, though. The sifting step in the recipe should prevent you from using meal bits that are too large.

And yes. My use of futz = fuss with unnecessarily. Not sure what the actual etymology is....
