Last night was slow-roasted lamb shanks in red wine and balsamic vinegar, mash and gravy. (The lamb shanks come in packs of 2, so I was forced to eat both of them.)

So simple:

5 or 6 big Granny Smith apples, cored and quartered, but with the skin left on.

Put 3 tablespoons cold water, 1 tablespoon lemon juice and 1 tablespoon castor sugar into a pot, and bring to a boil.

Chuck in all the apples.

Leave at boiling temp for 5 mins, then reduce to a simmer, stirring occasionally.

When all the apples are soft (25-30 mins), run the whole lot through a mouli to remove the skins, and salt the sauce to taste.

Delish dinner tonight..

Roast port in sweet chilli and coriander .. with copious amounts of fresh coriander to serve, broccoli and spinach from our garden .. picked and cooked .. with the absolute best baked potatoes, roasted pumpkin and sweet potato.

Monday: Spaghetti (no noodles, just sauce, for Menolly)
Tuesday: Tacos (no tortilla, just meat, cheese and veggies for Menolly)
Wednesday: Cherry-smoked chicken thighs and Israeli salad
Won't know about tonight until I go to market and see what jumps in the cart.

Hahahahahaha .. all good stand bys involve bacon .. or they SHOULD involve bacon LOL 😂

Well last night was a night out .. had to travel into Canberra but was totally worth it .. met up with the girls .. had pre dinner drinks .. then to the restaurant .. was Afghani restaurant .. wasnt really sure what Afghani food was going to be like .. and it was unbelievably deiicious..

Of course we went banquet .. cos we were a large group and you get to try little bits of everything that way ..


Oh my gosh .. who knew dumplings were an afghani thing .. we had vegetarian dumplings, chargrilled meats .. and breads which came with a coriander, chilli, lime, lemon, and maybe dipping .. pouring sauce .. and a mint raita thingy .... it was YUM :mrgreen: and we had a very eloquent dahl .. not my choice .. yeah you could choose your own banquet dishes .. and we had this spicy beef dish .. which was awesome ..and a potato thing, and a carrot and veggie thing.

A couple of really nice bottles of wine .. a really nice Wolf Blass Grey Label red and some other red .. not as nice as the Wolf Blass .. maybe its Blas .. but yummy ..

Not a big fan of afghani deserts .. I tried a ice noodle thing .. must be an acquired taste .. lots of rose oil flavour ... a mango ice thing which was nice and a pistacio ice thing which was also nice .. I had a carrot halwa .. which came with tea .. so I was very happy.

All in all a fun night

We had baked taters with chilli and coleslaw, cheese and sour cream last night.

Tonight Sunday roast .. chicken, with all the trimmings :biggrin:

Night before last I had steak and chips, but it was such a massive steak, and I'd had a late lunch, that, unusually for me, I didn't manage to finish it.

So last night I sliced the left-over rump into thin strips, gave them a quick sear (I like my steak relatively rare) and made steak, lettuce and tomato sandwiches.

Tonight will be lamb chops with rice and peppers and whatever else is floating about.

When the kids arrived I made vegetarian tikka masala .. without the chicken or other meat

Last night I made spinach lasagne and Trev made a nutella cheesecake for my sons bday cake

Tonight we had baked taters with vegetarian chilli and salad and sour cream and cheese.

Hahahahaha .. 😘 sadly they are 🙄

Last night I made my standby satay .. but vegetarian ;)

Wok toss onion and lots of garlic, add julienned carrots, broccoli, cabbage, capsicum ..

I cooked up some egg in another pan and added that as well .. thankfully theyll eat my eggs .. as they are free range and unfertilised.

Trev was going to do a dessert but no one had any room for one. So that was a win ;)

Tonight Im making falafel and they leave tomorrow, Sat morning .. then Trev will go back to being cook in chief 😎

We've had house guests this week. Dam-sel's eldest brother lost his wife of 32 years five years ago...and is visiting with his new bride. This has been good for him, and it is always great to see New Relationship Energy, even if we very much have to downplay some aspects of our household structure. They are very devout Christians...and while Dam-sel, Menolly, and I are in this with clear eyes and full hearts, discretion is by far the better part of valor.

Tuesday, when they arrived, I did a marinated flank steak with corn and broccoli. It turns our that the new wife of my brother-in-law is on a very similar diet to the one Menolly has been on these last three weeks. She politely ate the corn (not noticing that Menolly took none, and there wasn't an ear made for her), and felt it the next day. Sorry about that...and do we have a menu for you!

Wednesday was grilled chicken breasts and a saute of green bean, onion, mushroom and rosemary.

Thursday was a picnic at the kickoff of the annual "Rockin' on the River" concert series. Prior to learning of of my new sister-in-law's diet, I'd prepared a tuna-macaroni salad that Dam-sel had suggested for the occasion (it is best with a couple days refrigerated melding time prior to service), but Menolly had planned a more keto-friendly (carb-free!) tuna salad to be served on her chia bread. She also made a crustless cheesecake.

Between the two salads and the cheesecake, we had a wonderful picnic before the Venture Highway Revisited tribute to America, Crosby, Stills, and Nash, Chicago, Doobie Brothers, etc.

Singing the songs of that era is so good for me...and the only people who notice that I choke up doing Helplessly Hoping don't have to ask why. :biggrin:

Gotta say I've never been one to let "politeness" dictate my food choices. If somebody offers me something I don't eat, I politely decline it. :D

I get that, Av, but I also completely understand being a guest who wants to accept offered hospitality without turning aside something she did not realize would impact her. She had moved away from carbs, but did not appreciate how much her body had adapted to that choice.

If anything, it was a cautionary tale for us and may help us remember that if we go down this serious keto path, that off-diet indulgences may have consequences.

Sounds like you put on quite a nice gastronomical menu nevertheless. Seems to be working out quite nicely this .. disparate diets thing.

heh.
More like SD's physician told him doing keto is a good idea...

Now, the only hold out is Dam-sel, as she refuses to give up her morning cereal, orange juice, and occasional ice cream. As well as other carbs.
