Double Chocolate Mocha Trifle

Cake-like brownie chunks nestle between layers of creamy mocha pudding and crunchy toffee bits.

1 package (18.25 ounces) brownie mix
1 3/4 cups cold milk
2 packages (3.4 ounces each) white chocolate instant pudding and pie filling
1/4 cup warm water
4 teaspoons instant coffee granules
2 cups frozen whipped topping, thawed
3 toffee bars (1.5 ounces each), coarsely chopped

Lightly spray a 9x13 pan with vegetable oil spray. Prepare and bake brownie mix according to cake-like package directions. Cool completely. In a large bowl, whisk pudding mix into milk using a whisk until mixture begins to thicken. Dissolve coffee granules in warm water; add to pudding mixture, mixing well. Fold in whipped topping. Cut brownies into 1-inch cubes using a serrated knife. Chop toffee bars. Layer 1/3 of brownie cubes onto bottom of a cold bowl. Top with 1/3 of pudding mixture, pressing lightly, and 1/3 of chopped toffee. Repeat layers two more times. Chill 30 minutes before serving.

The following recipe for Cottage Pudding, which is actually a cake, is from James Beard's American Cookery. We've also included a recipe for Boiled Custard, also known as Creme Anglaise, for Mel Burgess, who remembers eating Cottage Pudding soaked with a sweet sauce.

Cottage Pudding
1/3 cup butter
2/3 cup sugar
1 egg
2 1/4 cups all-purpose flour
5 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 teaspoon vanilla extract
1. Preheat oven to 350 degrees. In a mixing bowl, thoroughly cream butter and sugar. Beat in the egg. In separate bowl, sift together flour, baking powder and salt. In small bowl, mix milk and vanilla. Mix flour mixture, a bit at a time, with creamed mixture, alternating with additions of milk and vanilla.

2. Butter an 8-inch square baking pan and spread the batter evenly in it. Bake 40 minutes, or until a toothpick inserted in the center comes out clean. Serve the cake with Boiled Custard (recipe below), or chocolate or butterscotch sauce, or fruit puree.

Boiled Custard
6 egg yolks
1/2 cup sugar
1/4 teaspoon salt
3cups light cream (half-and-half) or milk
2 teaspoons vanilla extract
1. In a saucepan, heat the light cream just until it steams. In the top of a double boiler (or in a mixing bowl set over a pan of simmering water), whisk together egg yolks, sugar and salt. Slowly add the light cream to the yolks, whisking constantly. Continue to whisk constantly as mixture cooks. When mixture is thick enough to coat a spoon, remove from heat and stir in vanilla. Serve warm, or cool the custard to room temperature before chilling it.
my Ma used to make it with Hershey's cocoa recipe for pudding, but made it thinner into a sauce.....pour puddin sauce over the cake.... :faint:

YUM!

Raspberry sorbet. Don't like heavy desserts. Well, I don't like heavy desserts just after a big meal, which is where some silly people put them!

I'd eat this for breakfast, lunch & dinner, if I wasn't going to be 500lbs within a few months of eating it all the time. Yummy.

Traditional Scottish Recipes
- Sticky Toffee Pudding

This is a popular dessert in Scotland amongst people who have a sweet tooth and don't mind a few extra calories.

Ingredients:
2 oz (60g or ½ stick) soft margarine
1½ oz (50g or generous one third stick) butter
7 oz (200g or one cup) white sugar
8 oz (250g or two cups) plain flour
1 teaspoon baking powder
1 teaspoon bicarbonate of soda (baking soda)
1 egg whisked
6 oz (185g or 1½ cups) stoned dates
1 teaspoon vanilla essence
2½ oz (65g or one third cup) light brown sugar
2 tablespoons double cream
½ pint (250ml) boiling water
Method:
Cream together the margarine and sugar. Sift together the flour and baking powder. Beat the whisked egg into a creamed mixture with a little of the flour and baking powder and continue beating for about a minute before adding the rest of the flour/baking powder.
Chop the dates and flour lightly. Pour the boiling water over the dates and mix in the bicarbonate of soda (baking soda in US) and add the date mixture to the batter and mix well.
Place in a buttered tin (or one lined with baking parchment) and bake for 40 minutes at 350F (175C or Gas Mark 4).
When the pudding is cooked, heat the brown sugar, butter and cream and simmer gently for 3 minutes. Pour over the pudding and place under a grill until it starts to bubble. Then serve.

You can also add a small(ish) dash of whisky if you like.

Pumpkin Hagen Das? That's disgusting.

Mine favourite is chocolate mousse. Not the rubbish you get from restaurants either.

My recipe contains nothing but 1 egg and 50g dark chocolate per person.
