Metal Gear Solid music is good, especially in MGS4 like fight scene with Ocelot and music for the Beasts. MGS music is also good and set the mood for the base.
Final Fantasy music of course, like boss themes the most
Music from Shadow Hearts is really good but not so much from Shadow Hearts 2
Opening theme to Halo

Final Fantasy(s), Doom(s), Ultima(s), Diablo(s), Zelda(s), Metroid(s), Gear of Wars(s), Bioshock, etc.

I have playlists of video game music. Hell, I have playlists of playlists of video game music. And I've been known to download a lot a lot from ocremix.org

edit: Oh, and Full Throttle has possibly the best soundtrack of a single game. Ever. And it has possibly the best intro of a game ever. It's maybe the best game EVAR.

Since someone mentioned a possibility for "best game ever", I'm obligated to mention Deus Ex :)

It's also one of only two games that I have the soundtrack for (the other being Fahrenheit).

Mario has so much memorable music...

Shadowrun for Genesis has great atmospheric stuff...

Both Tekken 3 and Rage Racer had awesome soundtracks that fit the style and feel of each Playstation game...

007, along with the music, has so many memorable sound effects: dununt-denuh!

Final Fantasy 3 has some very, very memorable music...

While not original for the game, the tracks selected for Burnout 3 on the Xbox are awesome...

Man, I know I'm forgetting alot of other good ones.

Uematsu's work with the Final Fantasy series is legendary, and rightly so.

Most of the NES Capcom games had absolutely killer music as well. (Specifically Duck Tails and the Mega Man Series)

Castlevania:SOTN has one of my favorite scores of all time.

I really think though, I'm most partial to the music of the Chrono games, specically Chrono Cross. (I think, an extremely underregarded game. It stands out as the greatest JRPG of it's generation, with the possible exception of FFTactics)

The only symphonic score that has ever actually moved me in a game is that of Dragon Quest VIII.

My favorite piece of music ever on a PC game remains, to this day...

Moody, atmospheric, full of fragile beauty.

(Edit: As a postscript. I think Super Metroid is a perfect game in EVERY regard, including music. Metroid prime is very close to being as perfect...)

(Edit again: Another PS, about the Doom soundtrack...

Both these games have incredible soundtracks IMO, I'm not sure which I prefer. Probably CC for the battle music and the towns.

I'm a big fan of the soundtracks from Earthbound (or mother 2) and mother 3. Maybe I'd be a fan of mother 1's soundtrack as well if I ever play it.

There's this freeware game called La-Mulana that I think has pretty incredible music, the soundtrack (and the game itself) can be found quite easily.

The Fire emblem series has some of my favorite music, and there are two Japanese commercials that feature the theme song done opera style

I love that they have horses on stage :)

My favorite versions are from FE4, 5 and 9.
