Will you share your recipe in the Galley, MsMary?
It's pretty much the recipe from The Moosewood Cookbook, with matzah instead of filo dough. And I use half the amount of feta cheese she calls for, cause it's very salty with the full amount.

I also adapted her recipe for stuffed acorn or butternut squash for Passover. I use the cottage cheese-mushroom-onion-parsley filling and substitute matzah meal for the rice or breadcrumbs.

I'll need to find a copy of the cookbook as it's not one I own.

I assume you butter the sheets of matzah as if they were phyllo?

*~*edit*~*

I just found this post of the Moosewood Cookbook recipe online. Do you substitute sheets of matzah 1:1 for the sheets of phyllo, although using enough sheets per layer to cover the pan? So, like 24 layers of matzah, all told? And do you moisten the matzah to make it pliable like phyllo before oiling them?

I make an acorn squash with apple stuffing. Almost a charoses filling, come to think of it. It makes a nice entree for vegetarians/vegans and a good side for omnivores.

I don't substitute matzah 1:1 because matzah is much thicker than phyllo dough. I just use enough to cover, top and bottom. I soak the matzah in a big pan of water to make it pliable and I do use some butter on the matzah.

I knew what Pesach was-- that was it. Thanks for enlightening the goyim, Menolly!

Cam, Matzo is very thin, crisp, and toasty. Very versatile. I am thinking that it would be great in place of pita breads-- in fattoush salad, spread with hummus, tahini, or babaganoush, or with herbed yogurt cheese. Okay, now I'm hungry and dinner is hours away!! 8O

Feeling very, very stressed. There are just too many question marks in my life to suit me. After a few hours in the classroom, it's much better. :) There's something about tempera paint, construction paper, and Elmer's Glue that makes life seem doable. :D

I won the NES A-Type Tetris Tournament at the Midwest Gaming Classic :D I got 3rd in the elimination tournament, which was for the title of Midwest Tetris Champion and a trophy, but the NES tourney that I won was the one that *mattered*. A pretty fun weekend. Plus the show was cool. Lots of old arcade and pinball games, all set to "free play" mode. Lots of old computers and old gaming systems. Some other attractions.

Only problem now is I have to return to my boring old normal life

Awww, man... if only we could see the day-by-day stuff building towards something good & exciting too. (that's me, though.)

Congrats, shur-LORD! :7up:

And I know what you mean about convention hangovers. It's gotten so that I take an extra day off when I get back from a convention or a Watch 'fest, just as a cushion between the fabulousness of the gathering and the not-so-fabulousness of RL. :(

Gebrok refers to matzoh which has been moistened. Those who are ultra-observant and want to avoid any possibility of consuming leavened products during Pesach do not allow the matzoh to get wet, lest some stray yeast molecule happen by and start a rising reaction. Those who follow this level of observance would not make or eat the spanokopita Ms. Mary mentions upthread, since it is made with moistened matzoh.

This is similar to the rules observed by some that also forbid corn, rice and other grains during Pesach. While I do not observe either of these "fences around fences around fences" rules for total Pesach purity and I enjoy the debate on their utility, I have come to accept that this is the standard of observance some follow. What's the reason behind that? Being so against yeast bread during a specific time, I mean.

Pesach commemorates the exodus from Egypt, when we left in such haste that there was no time to wait and let breads rise before baking. As part of the celebration of our ancient release from bondage, we now eat only unleavened bread during this week-long holiday.

Again, for those most observant, this is carried to the point of eliminating all leavened products (and all products which could conceivably be "contaminated" with leaven) from the household during this period.

Interesting SD.

We got slammed at work today. Last customer didn't leave until half an hour after we closed. The recovery was ok but the top stock didn't get done. It was kinda frustrating. Our sales were off the hook though. The best part of my day so far was laughing with Sorus about the awesome kitty toy I saw and HAD to buy for her over the weekend. She posted adorably cute pics of some of her brood playing with the toy on my blather blog. I'm so happy they liked it. Yay Kittehz!

@ Linna...yeah, my life outside of Tetris sort of sucks right now, which is probably why I throw myself at it so completely. But on the bright side, the Tetris path lead me towards meeting some really cool people this week. And I actually had *fun* :) So that was a nice change of pace.

@ali...I know what you mean. I really need the money now, but when I went to work, they offered to let me go, so I said "see ya!"

@Iolanthe...dogs are good and happy. I built them a pen connected to the house with a doggy door and asked my brother to check on them while I was gone. So it worked out well. Dogs really like being able to run in and out as they please :D

@all...thanks for the congrats :)

I say....to hell with cholesterol.......and make it even more enticing sprinkle a little salt on top. Its coronary flatbread. yum!

So I have been up since 3am. Here is the thing, every morning at 6:00am there is an exercise show called Classical Stretch on pbs. Great show! The problem is I watch the show religiously.........yes, WATCH. I sit my big ole' butt in a chair and WATCH the show. Never have exercised with her, hoping that I will reap the benefits by osmosis. This morning I intend to DO the exercise. Lets see if I follow through.

YES! I didn't know a simple 20 minute stretch could be sooooo hard. I am so uncoordinated and stiff. But I have to tell you, I felt more relaxed afterward. I am going to do it again tomorrow.

Good for you! :) I'm aiming for post-Magickmaker's departure to restart an exercise routine.

shur-LORD, are you saying that you lost your job over leaving for the weekend??
