How do you take your cheese?Are there any cheeses that you would recommend a fellow cheese lover try?Do you care to share a cheese recipe?Or would you just like to gush in praise of mans greatest culinary creation?Its all about the cheese baby.

Brie with Hot Pecan Caramel Sauce

1 5 inch wheel brie cheese
1/4 cup firmly packed light brown sugar
1/4 cup water
1/2 cup pecan halves
1/4 cup heavy cream
1 Tbsp unsalted butter
1 baguette -- sliced thin

Warm a sharp slicing knife in very hot tap water and carefully cut the top rind off the brie wheel. As a slicing guide, you can insert skewers into the cheese just below the rind. Let the knife blade rest on the skewers as you slice off the rind.

In a sauce pot combine the sugar and water; bring to a boil, reduce heat and simmer until reduced by half and sauce is dark brown. Remove from heat and add the pecans and cream. Stir well. Return mixture to a simmer and cook until slightly thickened, about another 4-5 minutes. Remove pan from heat and stir in butter.

Place the brie on a large plate. While it is still hot, pour the caramel and pecan mixture evenly over the brie, letting some of the caramel run over the sides of the cheese. Surround the finished brie with baguette slices and serve.

NOTES : A brie wheel covered with a hot pecan caramel sauce looks lavish, tastes great and yet is simple to do. You can prepare the caramel several days in advance. On the day of your party, let the cheese warm to room temperature, reheat the sauce, and pour it on just as guests arrive. Baguette slices or whole-grain crackers make this appetizer complete.

don't like American cheese Esmer. processed garbage. I nice hard cheese, aged to a fine sharpness. with apple pie, or just an apple. softer cheeses for a nice french loaf or crackers.

I really can not say that I have ever had a cheese that I did not like,or at least find interesting in some way.Can anyone recommend a sharp,stinky cheese that I may have not tried?

I thought that it would be humorous to deflect the obvious reference,and replace it with a gay stereotype. :roll: :lol:

If you have a branch of the grocery store chain Whole Foods Market near you, be sure to visit the cheese section. They import cheeses from all over the world; next time I go I want to try some French sheep cheese (made from sheep milk) I have been told is very good. :)

we have a Central market in Houston. their cheese section is heaven. sorted by country. and someone to let you sample. I have had their sharpest cheddar via sample. pretty sure my heart stopped for a moment. :)

Today I dropped by Whole Foods. They did not have the French sheep milk cheese in stock, but I picked up a very nice two year old sharp Canadian cheddar. :)

What surprised me was that they had cheese made of buffalo milk. 8O I've seen buffalo running around in some of the national parks out in the western US. Those are huge, strong, fast, and cranky animals. I would think that milking one would be akin to trying to milk a rhino. :lol: :lol: :lol:

I should have picked some up. Buffalo meat is like the finest beef, but is much healthier in its fat content. :) I bet the cheese is probably pretty good, too. 8)

The best fresh mozzerella is made from buffalo milk. Mmm...makes terrific caprese.
